TV shows I’m (not) loving right now

The Olympics are on now and a lot of my shows are on hiatus. So I thought it was a perfect time to post about the shows I’m loving right now and those that are on the fence to be removed from my DVR.

Seriously, my DVR cannot handle the amount of shows I watch right now. Hot mess.

Let’s take a closer look.

Love:

  • Life Unexpected (CW) – Yeah it’s kind of hammy but it’s a really cute show and it makes me want to visit Portland stat
  • Good Wife (CBS) – This is one of my new favorite shows. Juliana Margulis is great and I love that Mr. Big and Chicago are featured in it!
  • Lost (ABC) – OMG I love this show. I’ve watched since the beginning and I’m dying to see how it ends. Plus, I have a big crush on Sawyer and Jack. Rawr
  • Damages (FX) - This is another show I really love. I’m confused for most of the season but then it starts to come together and it’s really explosive. Glenn Close is great and this season’s topic (a Ponzi scheme) should be really good!
  • Parks & Recreation (NBC) – I don’t have a lot of love for NBC (due to CoCo drama) but the second season of this show is really growing on me. Amy Poehler is hilarious and Aziz Ansani cracks me up. Plus, it makes me really want my own DJ Roomba. YES!

On the fence:

  • Bachelor  (ABC) – I love a train wreck just as much as the next person but the 120 minutes of non-stop backstabbing and drama? Kill me. Plus, I really CANNOT stand Vienna. Yet, I keep watching. FAIL
  • 30 Rock (NBC) - When it’s hot, it’s hot but lately, the humor has been falling a little flat. Tina Fey and Alec Baldwin still make me laugh but sometimes, it’s just too over the top
  • Grey’s Anatomy (ABC) – Yawwwwwnnnnnnn. Wait, is this show still on? I used to really like this show and it has great season finales but every episode leading up to that is a marathon in nausea
  • Nip/Tuck (FX) – I cannot wait for this show to be over. The last three episode are dragging! I used to love it for being so provocative but it jumped the shark about two years ago and I’m bored of the metaphors about inner vs. outer beauty. I GET IT

I love the Olympics but I’m ready for my regular shows to come back too. Hello, 90210, Gossip Girl and Melrose Place, I miss you! Plus, I’m ready for Top Chef again soon. Can’t wait.

Kitchen adventures: Balsamic Poached Chicken

After my recent success with the slow cooker and baking kale, I was on a mission to find another recipe ASAP.

Then, my cubemate (and super trendy/hipster friend) Lizz said she had a recipe that was delicious, sounded gourmet and was easy to make.

In return I said, “I want to go to there.”

The recipe is called: Balsamic Poached Chicken. Whenever I say it, I feel like I should be doing a demo and gabbing with Martha. Because we’re cooking besties.

When I first read through the recipe it sounded a little challenging, but after talking to some friends about my questions, I felt more confident about it.

One friend even asked, “[The recipe] Sounds good, do you have a date or something?”

Sadly, I had to say no, but this is a great dish to make for a date, friend or even family in town. And yes, it was pretty easy.

(Forgive the crappy food styling)

Balsamic Poached Chicken (from Real Simple)

Ingredients:

  • 1 pound red potatoes, halved or quartered
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 pound asparagus, trimmed
  • 1 14.5-ounce can low-sodium chicken broth
  • 1 cup balsamic vinegar
  • 1 1/2 pounds boneless, skinless chicken breasts

Directions:

  1. Heat oven to 400° F. Place the potatoes in a roasting pan. Drizzle with the oil. Season with 3/4 teaspoon of the salt and the pepper, and toss. Roast for 30 minutes, shaking the pan once.
  2. Add the asparagus to the pan with the potatoes, season with the remaining salt, and toss. Roast until the asparagus is tender, 12 to 15 minutes.
  3. Meanwhile, in a saucepan, bring the broth and vinegar to a boil. Add the chicken and, if necessary, enough water (up to 1/2 cup) to cover it. Simmer for 1 minute. Cover, remove from heat, and set aside until cooked through, about 15 minutes.
  4. Transfer the chicken to a cutting board. Return the liquid to medium-high heat and simmer until reduced to about 1/3 cup, about 10 minutes.
  5. Thickly slice the chicken. Divide the ingredients among individual plates. Drizzle with the balsamic mixture.

The verdict: YAY!

The chicken was absolutely delicious and the asparagus was very tasty thanks to the kosher salt and olive oil.

I did mess up the potatoes a little bit because they weren’t as soft as I hoped, but Lizz told to use the broiler to add more color and to cook it on a cookie sheet instead of casserole pan. Good to know for next time.

Sadly, this week I’m traveling for work so I won’t get to do any cooking and I’m actually pretty bummed out. Wait, I cannot believe I just said that. Something must be wrong with me. Me, miss…cooking?

Well I’m off to find another recipe. A slow cooker adventure is in my future :)

Slowing down to enjoy the simple things

This weekend while I was treating myself like a queen on Valentine’s Day, I realized how much I need to slow down my life and enjoy the little things.

Seriously, I find as I get older that I get easily distracted and wrapped up in work, family or friend frenzy/drama and don’t take time to really sit back and relax. Again, on Valentine’s Day, I had a list of things I wanted to get done, but after awhile, I just enjoyed walking around and making plans with a friend to see a movie. Suddenly, that list of things I should really get done, didn’t really matter.

Planning meetups with friends seem to always be so complicated the busier you get, I’ve also realized that lately I’ve said to too many people, “I haven’t seen you in ages!”

Maybe it’s just that time of year?

And today on my President’s Day off, rather than go out and run the seemingly endless number of errands I have to do, I opted for a low-key brunch with work friends and friends of work friends. There were Bloody Marys, champagne, peach juice, New York bagels, cream cheese, lox, chocolate croissants and citrus salad, and as we sat around the kitchen table laughing and sharing stories, I remember thinking, d*mn this is fun.

And with good eats/drinks like this, conversation came VERY easily :)

So then I thought about the other little things I want to slow down and enjoy doing: spending time w/friends, reading, cooking, writing, laughing, relaxing, entertaining, playing Wii, watching movies.

Sure, these things aren’t major, but maybe it will help to keep me from feeling like time is racing by and it’s a blur rather than a collection of memories.

Weekend recap: Happy Valentine’s Day

Happy Sunday and Happy Valentine’s Day everyone!

Yeah it’s Valentine’s Day.

I should hate it because I’m single, but really, I don’t. I know, I talk a good game about hating Valentine’s Day but really, I don’t loathe it.

What I do hate is the connotation that Valentine’s Day only applies to you if you’re in a relationship. I think it should be more about love overall. Love for friends, family AND significant other. Why can’t it just be like that?

But since relationships are the most important thing on this sweet/depressing day, I decided to take my #1 person in my life out for a day. That’s right, I’m single, so I celebrate my awesomeness independently and treated myself to a day downtown.

Actually, it’s been more of a “treat weekend.”

Friday was striptease at the gym, where I got a reminder I always need to see (along with a few hefty glasses of wine).

Trust me, after two glasses of wine, I am LOVING my body :)

We also got to make up stripper names. Yes, that sticker is on my boob too.

Saturday was haircut, movie and dinner at Noodles & Company (YUM).

Sassy! Seriously, I need to just commit to full bangs at this point.

And for the big day today, I went to yoga, brunch at Eleaven (they had a donut buffet for free!), shopping at Banana, another movie, Berry Chill and then home to close the day with more movies and a group date with Russell Stover and Whitman Sampler. Oh yeahhhh.

So that’s what I did this weekend, relax, go see movies and treat myself whenever I wanted. After a rough few weeks and a busy one coming up, I decided to take it easy and make sure one of the most important people in my life, me, didn’t feel left out on Valentine’s Day.

And I highly recommend everyone else does the same, single or married. Do something fun for yourself and if you have one, your significant other. It doesn’t have to be a grand gesture, but take that time out to recognize all the people you love in your life and don’t forget about yourself. Ever :)

Slow cooker success!

I am officially in love with my slow cooker.

It completes me.

I’ve been trying to cook more and become a little more skilled in the kitchen. I also wanted to start mixing up what I make for my week night meals, so I asked Santa to bring me a slow cooker. And he did!!

And then, per usual, I didn’t do anything with it for a few weeks.

But I finally started digging around for recipes and with some help from Jenn, I found one on Taste of Home that seemed pretty easy. I didn’t want to go too far out of my comfort zone, considering this could have been a disaster. Or the slow cooker could have exploded and set my house on fire.

You never know.

So I stayed home while it was cooking and the smell was amazing. Seriously, I didn’t want to wait for it to finish because I was hungry right away.

But I let it finish and I give myself an A because it turned out great and took minimal time to prep.

I present to you all, my first slow cooker success story: Herbed Chicken and Tomatoes.

Taste of Home Recipe:

  • 1 pound boneless skinless chicken breasts, cut into 1-1/2-inch pieces
  • 2 cans (14-1/2 ounces each) Italian diced tomatoes
  • 1 envelope savory herb with garlic soup mix
  • 1/4 teaspoon sugar
  • Hot cooked pasta
  • Shredded Parmesan cheese

In a 3-qt. slow cooker, combine the chicken, tomatoes, soup mix and sugar. Cover and cook on low for 5-6 hours or until chicken is no longer pink. Serve with pasta; sprinkle with Parmesan cheese.

Seriously it is that easy.

I added more chicken to mine and used some whole grain pasta with it and it was insanely delicious. Slow cooked chicken is probably my new favorite thing. It is so flavorful and tender, love love love.
