That’s right! After a two week break (due to travel), I’m back in the kitchen and baby it feels good!
First, thank you to everyone who has emailed me recipes and indulged my dumb questions. I really appreciate it and keep sending them my way!
Okay back to the meal.
This week I made: Shredded Chicken Tacos from Tasty Kitchen (at the recommendation of Lacey). But I had no idea what to make with them, so I got a little creative, pulled a recipe from Erin and added a little mixed greens salad with balsamic dressing and goat cheese. Light and simple.
And here’s the finished product!
Shredded Chicken Tacos:
- 1 package frozen corn
- 1 can black beans, drained
- 4 pieces chicken breasts; frozen, skinless, boneless
- 1 jar salsa
- 1 envelope taco seasoning
Pour the bag of frozen corn in the bottom of the crock pot. Add the drained black beans. Place the frozen chicken breasts on top of the beans and sprinkle with the taco seasoning. Pour the jar of salsa over the top.
Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
Remove the chicken, shred it, then add it back to the crock pot and toss with the corn and beans. You can use a hard or soft tortilla and add cheese or your favorite taco toppings.
Yes, it’s literally that easy.
A few things to note:
- I did not make it with beans and still loved it. So tasty
- The chicken is so tender that it falls apart easily when removing it from the slow cooker, so be prepared to use a spoon
- The author recommended Trader Joes Fire Roasted corn and Lacey agreed it give this more kick. I would definitely add more kick to this next time
- My chicken was done cooking on low at 6 hours, but be sure to check the chicken before shredding it
- I totally set off my smoke detector with the asparagus. So…watch out for that :)
I’m really happy with my dinner this week. And I’m going to start pre-planning next week’s too. Not quite sure what I want to make yet but so far, I’m on a good streak!

hey, i just wanted to let you know that i made these tacos this weekend and omg…yummmmmo! i added some onion to the slow cooker. i didn’t have taco seasoning, so i improvised w/ cumin, chili powder, and garlic.
I want that taco in my belly ASAP!
Yesterday I made Chicken quesadillas.
Mexican food: so delicious, so awesome.
Ooooo. Very simple and I have a Crock Pot so I could actually do this. I just might!

I made tacos last night, with refried beans and Morningstar burger crumbles. So easy, and so delicious.

Dude, I mourn tacos so hardcore right now. I love using my slow cooker for pulled pork or cooking a turkey (AMAZING), and really, it makes your life SO MUCH EASIER. Yummmy.
I could eat tacos (NOT from taco bell though) every day and not get sick of them. seriously.

Funny. I made slow cooker carnitas tacos last week that were terrific. I’d planned to post about them but then we got a puppy and forgot how to take pictures of anything that is NOT a puppy. Oh, and we’ve also temporarily forgotten to feed ourselves let alone actually cook anything. SIGH.

Nice job – looks great! I love me some Mexican food. Lately, I’ve been making my own salsa (since I eat it on eggs for breakfast). It’s so easy to make and there are so many variations of the same recipe that I’m pretty sure I’ll never go back to buying store-bought again.
LOVE Mexican! There’s a place we go to out here that is a very basic taqueria — I always get their chicken flautas with a pork tamale on the side. The flautas are, bar none, the best I’ve had including those I’ve eaten in Chicago. The meat is incredibly tender and, more importantly, they’ve figured out a way to cook the shell so it doesn’t completely break apart after one bite. Oh, and their horchata is great, too. I’d like to learn how to make that.
At home I pretty much cook only tacos, either with beef cooked on the stovetop or pork cooked in the CrockPot. We put refried black beans, avocado, tomato, queso fresco, sour cream and some type of salsa on them. Oh, and only corn tortillas will do!

I’ll have to look up some recipes for vegetarians and slow cookers…I wonder if a Dutch oven would work too? We make lots of Mexican food–particularly beans and homemade tortillas which are to die for!
This looks amazing, and I definitely need to try it because I adore Mexican food. I’ve just never made authentic (ish) chicken tacos like this, and I’m intrigued.
