Kitchen adventures: Eating my vegetables

I may be adventurous with food in restaurants but I am not with other parts of my diet. I love cheese, carbs and….more cheese. I go to these types of food for snacks, meaning I don’t eat a lot of grains or vegetables.

I don’t avoid them but I don’t exactly…run to them.

But lately, I’ve been trying to change that, especially with the veggies. Mexico is about a month and a half away and I need to get back on the pre-vacation routine that includes logging my calories (going strong!), working out and NOT drinking wine every chance I can multiple times a day.

Really, I wish that last part WAS part of the routine. Anyhow, one way I’m trying to stay healthy and eat my veggies is to incorporate them in my snacking routine and meals whenever I can.

Example #1: Cooking

I found a recipe for Flatbread with Pancetta and Asparagus on the Cooking Light Web site, yum. It called for asparagus but I decided to kick it up a notch and added zucchini, tomatoes and sweet onion instead. Not the epitome of healthy but it’s a start.

Example #2: Snacking

At work, I’m trying to avoid my co-workers never ending candy stash (damn you!) by having some healthy snacks available. Sometimes, I cannot avoid the lure of the candy jar, but I do enjoy my veggie mid-morning snack.

Lately, I’ve been loving my medley of green/red peppers and sugar snap peas. One of my foodie friends said that I need to have “color” on my plate, so I get the most diverse nutrients, so I’m trying to put that into practice.

Yes, veggies don’t taste like candy, but it makes me a feel a little less guilty when I do reach for the jar. Or it curbs how much of it I actually want/eat.

I’m also embracing my love of veggies and hummus too. Seriously, is there anything better than that…that’s not candy, cake, cupcakes, brownies or beer and wine? I don’t know.

Weekend recap: Colorado!

Happy Sunday everyone! I know it’s been several days since I posted here, but it’s for good reason: I just got back from a semi-solo vacation to Colorado!

Growing up in the Midwest, mountains were non-existent, so I decided to pack up and get up close and personal with them, and visit the lovely Doni and Ashalah along the way :)

During my adventure, I split my time between Denver and Boulder and let me say this, Boulder definitely won me over. Denver was cool and had great food (and beer) but two of the big highlights from the trip came in Boulder.

On my first day in Boulder, I was initiated to the city by hiking the Royal Arch trail in Chatauqua Park. Yes, I’m not a big nature person and I’ve never been on an official hike but I thought, no big deal, it’s not like we’re climbing a small mountain.

WRONG. I thought I was in shape, and then I went on this hike. Altitude definitely affected me because for part of it because I was having trouble breathing and focusing on the trail. It was only three miles, but it was intense with steep inclines, high rocks to step on and even some mini-rock climbing.

In all honesty, I didn’t think I would make it to the top and almost turned around to go back.

But I didn’t, I kept with it and I made it!!:

You can see the visible exhaustion and joy on my face. Sure, I complained a little bit, but I did feel a real sense of accomplishment at this. I am woman, hear me roar!

The next day, I was a little sore, so I made my bonding time with nature more low-key by going on a drive with Doni through Estes and Rocky Mountain National Park (along with some wine/beer tasting along the way).

The views were beyond amazing. I mean, I just don’t even know how to describe it. Being from a flat-landed part of the country, it just truly took my breath away. Here are some photos:

I would absolutely go back to Colorado (and want to soon!) and next time I want to go white water rafting and hit up more of the breweries that cover Colorado. Seriously, the local beer I had was delicious. Great Divide Brewing is one of my new favorites.

Fall TV is back!

This morning, I checked my DVR and saw that some of my favorite shows were in it, leading me to squeal in excitement, “Fall TV is back, yay!!!”

Yes, I yell things like that out loud. That’s one of the perks of living alone.

The BIG premiere week is next week (thank goodness I’ll be back from Denver for it!) but a few shows are starting now, which is a good move by the CW.

And thanks to Entertainment Weekly’s new issue, my DVR is going to be working overtime over the next few weeks as I select what shows I’ll keep watching this season and which one will be welcomed into my loving DVR recording schedule.

Here’s what I’m excited to see again in the DVR:

  • Glee (shock)
  • Modern Family
  • The Office (let’s hope it’s funny this year)
  • Gossip Girl (Chuck Bass, I missed you!)
  • Life Unexpected
  • The Good Wife
  • Cougar Town
  • Fringe (I need to start watching this more)
  • 30 Rock
  • Parks and Rec
  • Chuck

New shows I’m curious to check out:

  • Running Wilde (It’s like a marriage of Arrested Development and Felicity. Yes!)
  • Lone Star (Dallas-inspired. Yeah, I grew up watching Dallas)
  • My Generation
  • Law and Order Los Angeles (this could be really bad, but I’ll try it)
  • Undercovers (I love you JJ Abrams)

I have a very rigid screening process for my new TV shows because, well, I have to make sure I can actually watch everything I’ve recorded. And unless I give up sleep, work or working out, those shows will just be deleted, and why would I waste valuable space for that?

Weekend recap: Festivals, friends and food

Happy Sunday everyone!

I’m really glad I am off of work tomorrow because…I’m exhausted.

This weekend two blogger friends were in town, which means I got to hang out with them and indulge in several things I love about Chicago.

Including drinks at my favorite bar, The Violet Hour, more drinks, cheese and bread in TKTC’s garden, late-night tacos at Big Star (seriously, worst and most frustrating wait ever) and a pretty label wine party with more blog friends, where we knocked out seven bottles of wine and danced until 3 a.m.

I also hit up two craft/air fairs this weekend: Renegade and Lakeview East. I love seeing the creative, fun stuff people make and get inspired to redo my apartment in a more cohesive, adult, me style.

Sure, a lot of the stuff isn’t cheap, but it’s nice to support the local neighborhoods and get some fresh air. Oh, and drink beer on the street. Can’t forget that. And you get to see adorable stuff like this guy swimming down the street.

I wasn’t really looking for anything at the festivals, but did go in with a mental budget so I didn’t get a little loose with my credit card. And sadly, at both places, fate worked against me and many of the things I wanted weren’t available. But, Lakeview East was better to me and I got two handmade items and this new piece of artwork.

I’m totally in love with it and got a discount because the show was closing today. Love.

Then to close out the weekend, one of my platonic manfriends took me to a belated birthday dinner at Kith & Kin. Yes, it was delicious. And I got to try something a little different: a spread of fois gras on homemade brioche with a creme brulee-like butter topping. Insane.

So that was my crazy weekend! How was everyone elses weekend?

Random pre-weekend thoughts

Oh my gosh it’s another post dedicated to the random sh*t floating around in my head. I’m in the midst of still planning for  Denver for my trip next week so rather than have a post about something and turns into a random rambling, I’m organizing my thoughts into bullets to spare everyone’s sanity.

Let’s see what sick stuff I’m thinking about this week:

  • Glee starts in two weeks. My level of excitement is dialed up to 11. I really hope season 2 doesn’t suck
  • I didn’t get the iPhone last weekend and now am thinking about holding off until after Denver in case something goes wrong while I’m gone. Maybe I’m crazy and should just get it and stop worrying
  • I’ve been craving sushi like crazy lately. I want it all the time. Maybe my body wants me to be a mermaid or fish
  • Fall is definitely coming to Chicago. Time to start eating more and working on my “winter coat”
  • Why do I keep getting these painful, below-the-skin blemishes on my face? Those f*ckers hurt
  • I love the show Teen Mom, but I don’t love reading about them on the cover of entertainment magazines. These people are not MTV celebs. Please stop!
  • Few of my friends love to hug but I know they really missed me when they voluntarily hug me after being gone for a while. It feels awesome :)
  • I’m officially on a strict spending budget, minus Denver, until I get my bonus. Between paying my credit card and Nordstrom bill (damn you birthday!) and now booking Mexico for November, I’m getting a little freaked out. Why does this stuff all come together at once?
  • I’ve started dancing when I’m alone in elevators again. I hope the security people aren’t jealous of my sick dance moves in the security camera*supastar!*
  • I keep hearing the phrase “dry humping is not a f*cking joke” from Going the Distance in my head and laughing, I am so immature, especially when it comes to dry humping

Also, I’m going to try and get a Roomba video going this weekend, provided my teenage girl cooperates and I don’t have to pull her off the Wii Fit again. Kids.

Thank you for visiting my brain again, I promise I cleaned out all of the inappropriate things I was previously thinking (and dreaming) about. Your virgin eyes are safe!
